Ashley Cooney

Pastry Chef
“I don’t remember a time in my life where working with food wasn’t the only option.  I grew up knowing that one day I would become a chef, and make people happy through food.  I started this journey at the age of 12 in Culinary camps/classes and quickly moved on to complete all of the culinary classes offered at E.T.H.S.  When it came time to fill out college applications, I knew I only needed to fill out one, I put all my eggs into one proverbial basket and applied to Kendall College.  I spent the next five years pouring myself into school, and working full time at Art Smith’s Table Fifty-Two downtown.  When I graduated with a BA in Culinary, AS in baking and pastry and a certificate in business I was incredibly proud and found myself feeling the need for change somehow.  I decided to move to Dublin, Ireland on a whim, and quickly found myself working as a pastry chef in one of Dublin’s top restaurants and also found myself in love with an Irishman.  Fast forward six years to today, and I’ve moved back to Chicago with my husband and two little girls and I was ready to get back to the grind of the kitchen, but unable to find a balance between being at home with my kids and pursuing my other passions.  When I was asked to join the Curt’s Cafe team as my new company, “Ashley Bakes,” I knew it was going to be amazing.  I absolutely love the whole idea of Curt’s Cafe and the possibility of being able to introduce my passion to young people who need a motivation brought such a feeling of content that I knew it was going to be the right choice for me.  I am truly honored and blessed to be a part of such a beautiful community, and I cannot wait to see what’s in store for the future.
